Olive oil can be substituted for butter in most recipes using the following conversion chart:

1 tsp = 3/4 tsp
1 tbls = 2 1/2 tsp
1/4 cup = 3 tbls
1/3 cup = 1/4 cup
1/2 cup = 1/4 cup + 2 tbls

A spicy egg and hash brown potatoes breakfast dish.


2 tbs

Victorine Chipotle Flavored Olive Oil


medium onion, chopped

1 20oz

pkg shredded hash browns

1 cup


Flaca's Tortilla Chips, broken into pieces

1 cup

cheddar cheese, shredded

3 tsp

cilantro, minced



eggs, beaten

3/4 cup


Flaca's Salsa



salt & pepper

Heat large skillet over low heat, add Chipotle Olive Oil and when hot add chopped onion and sprinkle with salt.
Cover and sweat onion, stirring occasionally until soft.
Add hash browns, sprinkle with a little more salt, increase heat, replace cover, cook 5 minutes, stirring.
Add broken chips, stir to combine replace cover and cook another 5 to 10 minutes, scraping browned hash browns from bottom of skillet.
Remove cover, add eggs, cheese and cilantro - reserving some cheese and cilantro for topping finished dish - stir and cook another 5 minutes until eggs are set.
Adjust seasoning, top with salsa and reserved cheese and cilantro.
Finish with a drizzle of Chipotle Flavored Olive Oil.
