Substitutions

Olive oil can be substituted for butter in most recipes using the following conversion chart:
Butter Olive Oil
1 tsp = 3/4 tsp
1 tbls = 2 1/2 tsp
1/4 cup = 3 tbls
1/3 cup = 1/4 cup
1/2 cup = 1/4 cup + 2 tbls
2/3 cup = 1/2 cup
3/4 cup = 1/2 cup + 1 tbls
1 cup = 3/4 cup

Look for olive oil bottled in dark glass with the harvest date on the label and store away from heat and light – resist the temptation to keep it next to your range.


GRILLED PORK TENDERLOIN with CHIPOTLE-BOURBON SAUCE
A smokey rich flavor comes from using our Chipotle Flavored Olive Oil to make a rub for the pork and then using it again to make a sauce.

2 1lb

pork tenderloins, trimmed

3 tbs

Victorine Chipotle Olive Oil

2 tsp

dry ground mustard

2 tsp

salt

2 tsp

 

ground black pepper

 

 
Sauce

3 tbs

 

Victorine Chipotle Olive Oil

1/2

 

onion, finely chopped

2 cups

 

chicken stock

1 cup

 

bourbon, plus 2 tablespoons

2 tbs

 

brown sugar

1 tbs

 

Victorine Black Currant Balsamic

 

 

salt & pepper

GRILLED PORK TENDERLOIN
with CHIPOTLE-BOURBON SAUCE

Directions

Combine rub ingredients and rub evenly over both tenderloins. Cover and refrigerate 2-3 hours. Bring to room temperature before grilling. Grill approximately 15 minutes to an internal temperature of 145 degrees. Allow to rest 15 minutes before serving.
 
To make sauce, heat Chipotle Oil in medium saucepan, add onions and saute until soft. Add stock, 1 cup bourbon and brown sugar. Bring to a boil, reduce heat and cook until reduced by half. Strain to remove onion, return to pan and continue to reduce until thickened. Add remaining 2 tablespoons bourbon, Black Currant Balsamic and any accumulated juices from the pork, cook several more minutes. Adjust seasoning with salt and pepper if needed.
