Substitutions

Olive oil can be substituted for butter in most recipes using the following conversion chart:
Butter Olive Oil
1 tsp = 3/4 tsp
1 tbls = 2 1/2 tsp
1/4 cup = 3 tbls
1/3 cup = 1/4 cup
1/2 cup = 1/4 cup + 2 tbls
2/3 cup = 1/2 cup
3/4 cup = 1/2 cup + 1 tbls
1 cup = 3/4 cup

SLOW COOKER BALSAMIC CHICKEN
Black Currant, 18 Yr Traditional, Fig or Pomegranate Balsamic all work equally well in this recipe.


 
Ingredients

3

boneless, skinless chicken breasts

1 14.5 oz

can diced tomatoes

1/2 cup

balsamic vinegar

1/2 cup

 

chicken stock

3/4 cup

onion - chopped

3

garlic cloves - crushed

1 tbs

 

dried Italian herbs

 

 

salt & pepper

SLOW COOKER BALSAMIC CHICKEN

Directions

Salt and pepper chicken breasts and place on bottom of slow cooker.
 
In a bowl, mix all remaining ingredients and pour over chicken.
 
Cook on high for 4 hours.
 
Remove chicken to a plate and keep warm. Strain cooking liquid and put in small saucepan.
 
Bring liquid to a boil and reduce slightly to thicken, 3 to 5 minutes. Pour over sliced chicken breasts.
