Substitutions

Olive oil can be substituted for butter in most recipes using the following conversion chart:
Butter Olive Oil
1 tsp = 3/4 tsp
1 tbls = 2 1/2 tsp
1/4 cup = 3 tbls
1/3 cup = 1/4 cup
1/2 cup = 1/4 cup + 2 tbls
2/3 cup = 1/2 cup
3/4 cup = 1/2 cup + 1 tbls
1 cup = 3/4 cup

GARLIC OLIVE OIL OVEN FRIES


Ingredients

potatoes, scrubbed and cut into sticks

1/4 cup

Garlic Flavored Olive Oil

1 tbs

fresh rosemary, chopped

1 tbs

 

Italian Parsley, chopped

1/4 cup

 

Parmesan, grated

 

 

salt & pepper

Directions

Preheat oven to 425 degrees.
 
Put cut potatoes in bowl and toss with Garlic Olive Oil.
 
Spread on rimmed baking sheet and sprinkle with salt. Bake 25-30 minutes, stirring several times. Sprinkle with herbs and return to oven for a few more minutes. Remove from oven and toss with grated Parmesan, salt & pepper.
